Dr. Khadija Sadiq Jaafar, a faculty member at the College of Agriculture, University of Basra, has been granted a patent for her invention of a method to preserve chilled fish fillets using edible gelatin films reinforced with magnesium oxide nanoparticles.
The patent details the preservation of chilled fish fillets using gelatin films reinforced with magnesium oxide nanoparticles. Studies have shown that magnesium oxide is non-toxic and possesses high antioxidant and antimicrobial properties, thus preserving all the studied quality characteristics during the chilled storage period.
